It’s a good time to assess every stage of your operation and take measures to protect food from high temperatures in the kitchen and outdoors. Whatever the application—small or large, mobile or fixed, electric or non-electric, inside or out—here’s a guide to maintaining proper cold food temperatures for quality, safety, and waste reduction across your foodservice operation. Merchandising The Reveal Refrigerated Self-service Mobile Case by Structural Concepts is a self-service display for merchandising cold foods and beverages for grab ‘n go. A dual handrail/bumper, leveling and locking casters, and evaporator pan splash guard support mobility and flexibility. Reveal’s EnergyWise Refrigeration System minimizes energy consumption. The Cambro Mobile Flex Station creates instant, adaptable, and space-saving merchandising wherever you need it. Cambro offers five different pre-packaged Mobile Flex Station configurations that can be accessorized with Cambro food pans, food boxes, GoBags, and GoBoxes to maximize capacity and meet changing needs. Place CP814159 Camchillers in the bottom of food boxes for short-term, non-electric merchandising of cold foods. The Cambro CVC75 Vending Cart Base Unit offers eye-catching merchandising for approximately 72, 12-ounce bottles or cans in ice. A large open serving well provides high-capacity merchandising with an in-well drain on both sides and a ball valve drain release underneath for efficient drainage. Buffets and Salad Bars The stainless steel TableCraft Wave Round Beverage Tub has a generous 6.75 gallon capacity and a style equally at home in informal and casually elegant settings. This 19″x19″x9″ beverage tub has plenty of room to ice down anything from bottles of beer, champagne, or white wine to soda cans or smoothie cartons. Perfect for both indoor and outdoor events, its double wall construction insulates and limits condensation, keeping beverages colder longer. Stainless steel Cooling Plates by TableCraft keep food chilled for up to 3 hours. Available in Half, Half Long, and Full sizes, use these elegant chillers separately, on stands, or in a cooling base station. The 3-Tiered Half Long Cooling Display shown here (#CW40309B) includes three half-size Cooling Plates and Black Powder Coated Stand to save space and show off product. Components are also sold separately. Buffet Camchillers can be used in a variety of serving applications to support cold food temperatures without the potential hazards of ice. One side serves as both a chiller and a riser for a 2″ deep, full-sized food pan so it’s level with the rail. Flip over to snugly hold a 4″ deep, full-sized food pan level with the rail. Freeze Buffet Camchillers overnight prior to use. Cambro ColdFest Pans and Crocks are made with an impact-resistant shell filled with non-toxic refrigerant gel. Before using, freeze upside down overnight and fill with pre-chilled foods to keep contents cold for hours. Use in Versa Salad Bars and buffets, or outdoors or on service counters to help keep condiments chilled. Cover with optional clear, flat covers to help protect against cross-contamination. Holding and Transport Non-electric Cambro insulated transporters like the 1318CC and UPC300 help maintain safe temperatures for at least four hours, whether for cold food or hot food. Freeze the Camchiller flat for 8 hours before use. Camtainer Insulated Beverage Servers keep cold beverages cold without electricity. Ideal for catering and outdoor events, this heavy duty insulated server has rust-proof plastic latches that secure lids tight and a vent cap to equalize pressure. A recessed faucet eliminates drips and ensures even dispensing, with continuous and individual pouring positions. Sturdy, modular Cambro GoBox Beverage Holders safely transport and hold cold drinks without spills or temperature loss. Interlocking units connect to hold up to 15 drinks in any Full-Size Top Loader GoBox or up to 6 drinks in any Half-Size Top Loader GoBox. Durable expanded polypropylene material of the GoBox and drink holders maintains cold temperatures for 3 hours. Tapered compartments fit multiple cup sizes of hot or cold cups from 8 to 32 ounces. The lid conveniently slides back and under during use, reducing risk of cross-contamination, while a recessed well and drain shelf keeps ice out of water to minimize melting. Molded-in, ergonomic handles and stable, strong caster options make it easy to move wherever you need it. FWE Refrigerated Transport Cabinets are built tough to easily handle the demands of transport, making them ideal for satellite operations, on-site catered events, and backup cold holding for buffets and cafeterias. With excellent “pull-down” times that are required to reach safe operating conditions, they feature extra insulation around the entire cabinet, including the base. This energy-efficient design holds cold temperatures and protects perishables wherever they travel, from hot kitchen to transport vehicle to serving location. Serving Hatco Drop-in Frost Tops are designed to hold quick-turnaround, pre-chilled food products at ideal and safe temperatures for serving. Each unit features auto-defrost, activated through a programmable advanced electronic controller. Environmentally-friendly insulation on the sides and bottom ensures better cold retention. Offered in a wide variety of sizes in aluminized steel and simulated stone surface finishes.
